Tomato, Mozzarella and Pesto Lasagne
Ingredients: 3 Rounded Tablespoons of pesto (99p 190g Aldi) = 31p 1 punnet cherry tomatoes- halved (59p Aldi) = 59p 400g frozen spinach (1kg 89p Iceland) = 35p Basil leaves torn (living pot 95p Aldi) = 6p Packet white sauce mix (Aldi 22p) = 22p 1 ½ Packets low fat mozzarella (43p per packet Aldi) = 65p ½ packet lasagne sheets (64p Aldi 500g) = 32p Grand Total £2.50 Method. Preheat the oven to 200 degrees. Make up the white sauce and make up then set aside. Cook the spinach and drain well - removing all the excess water with the back of a spoon. In a casserole dish (preferably square) place a large spoonful of white sauce on the base. layer a third of the lasagne sheets. Cover with white sauce (dont use it all) swirl through half of the pesto, half of the spinach, half of the mozzarella and sprinkle over the basil. Add the rest of the lasagne sheets and layer again as the last layer. Sprinkle with a few more basil leaves - season with salt and pepper - then bake for 35 minutes until all the lasagne layers are soft. Serve then enjoy! |
