Sweet and sour pork with stir fry veg noodles
Ingredients:
227g Pineapple chunks + 2 tsbps juice (540g 80p Tesco) = 15p
1 tbsp soy sauce (49p Home Bargains ) = 1p
2 Tbsp Tomato Ketchup (Aldi 69p ) = 2p
2 Tbsp white wine vinegar (59p Morrisons 250ml) = 2p
2 Tbsp Caster sugar (Aldi 1 kg 99p ) = 1p
2 crushed garlic cloves (39p 4 bulbs Farmfoods) = 2p
2 tbsp cornflour (400g 65p Aldi) = 1p
400g Pork loin cut into thin strips (£3.33 1 kg Farmfoods) = £1.35
4 tbsp any oil – price depends on oil
1 red onion (49p 1 kg Aldi) = 7p
1 red pepper (89p Aldi 3 peppers ) = 29p
2 sticks celery (49p Aldi approx. 8 stalks) = 12p
½ pack dried noodles (49p pack Aldi) = 25p
100g stir fry veg (66p 500g FF) = 13p
Grand Total = £2.45
Method :
Combine the pineapple juice ,soy sauce,ketchup, vinegar,caster sugar and garlic in a jug then set aside.
Boil the noodles until soft and set aside, heat a little oil in a pan just before the end of the pork cooking time and add the veg – fry until cooked through.
Place the cornflour and pork in a bowl and cover the pork in the flour. Heat half the oil in a wok/frying pan over a high heat , stir fry the pork until cooked through and set aside. Add the remaining oil to the pan and stir fry the onion,pepper and celery until tender. Return the pork to the pan with the pineapple chunks and the soy/ketchup mixture. Stir fry for about 1 minute until piping hot.
Serve with the noodles.
