Sausage & Pea Risotto
Ingredients: 454g Pork Sausages ( 99p Aldi) = 99p 50g Unsalted butter (250g Aldi 89p) = 17p 1 Onion (59p 1 kg Aldi) = 5p 2 Garlic Cloves (39p 4 bulbs Farmfoods) = 2p 350g Arborio/Risotto rice (£1.10 500g all supermarkets) = 77p 2 pints of chicken stock (stock cube) = Store Cupboard 150g Frozen Peas (89p 900g Aldi) = 15p 20g Parmesan (£1.30 80g Asda) = 32p (Optional) Salt and Ground black pepper to serve. Grand Total = £2.47 (With Parmesan) £2.15 (Without Parmesan) Method: Grill the sausages for approx 12-15 minutes until cooked through and golden. When cooled chop into pieces. Melt the butter in a pan and add the chopped onion and garlic. Cook on a medium heat until soft. Stir in the rice and mix continuously for a minute. Put the stock in a separate pan and keep this simmering. Add a ladle full of stock to the rice mix and allow to absorb, keep repeating this until the stock has all been absorbed. After 20minutes when the rice is almost cooked add the defrosted peas. Add the chopped sausage and allow to warm through. Serve with /without the parmesan - season with salt and black pepper.
