Mince and Dumplings Pie.

Heat a little oil in a pan, cook the chopped onion,garlic,chopped celery/and chopped carrots for 15 minutes until softened and golden. Add the beef and cook for 5 minutes until browned. Add the tomatoes, puree, beef stock, pinch of sugar, bay leaf and season with salt and pepper. Bring to the boil and then simmer for 20 minutes. Stir occasionally then transfer to a pie/casserole dish.
To make the dumplings : put the flour in a bowl and stir in the suet,salt and parsley. Make a well in the centre and add 150ml cold water and then mix until spongy. Flour a surface and roll the mixture into 8-10 small balls. Preheat the oven to 200 degrees and 180 fan assisted. Add the dumplings to the mince mix - cover with a little oiled foil allowing room for the dumplings to rise. Cook for 15 minutes until the dumplings have risen - remove the foil and cook for another 5 minutes to brown the dumplings. Serve - then enjoy!
