Low fat Tandoori Chicken:
Ingredients:
1 tsp lemon juice (250ml 60p Asda) = 2p
2 tsp paprika (49p jar Aldi) = 2p
1 onion (79p 1.5kg Farmfoods) = 5p
4 chicken thighs (£1.99 for 6 Aldi) = £1.32
150ml greek yoghurt (500ml 85p Aldi) = 25p
½ tsp Lazy ginger (59p jar) = 1p
1 garlic clove (39p 4 bulbs Farmfoods) = 1p
½ tsp cumin (49p Aldi) = 1p
½ tsp turmeric (49p Aldi) = 1p
2 Naan bread (49p for 2 Aldi) = 49p
2 bags boiled rice (59p for 4bags Aldi) = 30p
Grand Total = £2.49
Method:
Mix the lemon juice with the paprika in a shallow dish – then add the chopped onion. Make cuts into the chicken portions and pour over the lemon marinade and leave for 10minutes.
Mix the yoghurt, ginger,chopped garlic, cumin and turmeric – pour over the chicken and leave for an hour at least in the fridge or overnight would be better.
Lightly brush some oil in a frying pan or wipe over with kitchen towel – allow to heat – when very hot fry the chicken for 8 – 9 minutes both sides, or until cooked through.
Serve with the heated naan bread and boiled rice.
