Italian Layered Meatloaf

Ingredients:
25g butter - store
1 Onion (59p 1kg Aldi) = 5p
1 garlic clove (39p 4 bulbs Farmfoods) = 2p
200g Minced beef (£1.75 500g Aldi) = 70p
25g Breadcrumbs - store
1 tbsp lemon juice and ½ tsp lemon zest (3 lemons 69p Aldi) = 23p
1 tsp parsley - store
90g any pasta (500g 45p Aldi) = 8p
115g Streaky Bacon (250g £1.25 Aldi) = 57p
1 packet white sauce (25p Aldi) = 25p
20g Mature cheddar grated (£1.55 350g Aldi) = 9p
pinch chili powder
80g Everyday Essentials Crunch salad (48p 200g Aldi)


Grand Total = £2.48
Method:
Preheat a little butter in a frying pan and add the chopped onion and red pepper - fry for around 3 minutes, add the chopped garlic and cook for a further minute. Put the meat in a bowl, and mash with a wooden spoon until sticky. Add the onion mixture, breadcrumbs,pinch of chilli, lemon juice,lemon zest, parsley then season with salt and pepper. Set this aside. Cook the pasta until almost tender. Make up the white sauce and add the grated cheese. Drain the pasta and add to the sauce. Grease a loaf tin and stretch the bacon slices with the back of a knife - then line the base of the tin and the sides with the the bacon. Spoon in half the meat mixture cover with the pasta then spoon on the remaining meat mixture and level the top. Cover with any draped bacon over the sides of the tin and then cover with foil. Bake for 1 hour until all the juices run clear and the loaf has shrunk away from the sides of the tin. Turn out the loaf and serve on the salad leaves then enjoy!
