Kedgeree
Ingredients:
250 g Smoked Haddock (500g £2.79 Aldi) = £1.39
2 bay leaves = 2p
300ml milk = 15p (8 pints for £1.60 FF) = 13p
4 eggs (Aldi Free Range 95p for 6) = 64p
1 tsp parsley =1p
1 tsp coriander =1p
1 chopped onion (79p 1.5 KG ) =5p
1 tsp ground coriander = 1p
1 tsp turmeric = 1p
2 tsp curry powder = 1p
1 bag of boil in the bag rice (59p for 4 Aldi) = 12p
50 g frozen peas.(1kg 99p Aldi) =6p
GRAND TOTAL for 4 =£2.46
Method:
Boil the Rice and whilst cooking - poach the haddock in milk /bay leaves/parsley and coriander & cook through. hard boil
the eggs and then heat some oil in a pan. Add the onion /ground coriander /turmeric and curry powder, keep stirring and when the rice is boiled (you can pre cook this to ensure all ready at the same time) remove from the bag, drain the fish from the milk mixture and flake into pieces. Add the fish / rice and peas to the onion mixture and coat everything.When all is blended together
- shell the hard boiled eggs and cut into quarters. Put the kedgeree in bowls/plates and top with the quartered eggs.
