Chicken & Pepper Quesadillas
Oil - store cupboard
2 cloves of garlic (4 bulbs 39p Farmfoods) = 2p
1 Green Pepper (3 for 95p Aldi) = 32p
8 wraps (75p for 8 Aldi) = 75p
100g grated cheese (350g £1.55 Aldi) = 44p
250g cooked shredded chicken (1kg £3.33 Farmfood) = 83p
100g onions chopped finely (59p 1kg Aldi) = 6p
Grand Total = £2.42
Heat a little oil in a large frying pan. Cook the chopped onion and chilli (adjust to taste) until soft. Add the finely chopped, deseeded pepper - season well with salt and pepper. Mix in the shredded chicken and cook until warmed through. pre heat the oven to approx 100 degrees and remove the mixture from the pan and keep warm in an ovenproof dish in the oven.
A a little more oil in the frying pan and heat each tortilla (on one side only) until it begins to puff up. Remove from the pan and keep them warm in the oven. When all 8 have been heated - transfer one by one back into the pan (uncooked side down) On one half scatter over a little cheese and add the pepper chicken mixture and fold over and cook until the cheese melts. When each one is done - again keep warm in the oven until all 8 are prepared. Serve and Enjoy!
