Chicken & Veg Rice with Garlic Baguette

So easy to make and rich in flavour

Ingredients: 2 defrosted chicken breasts (£3.33 approx. 6 Farmfoods) = £1.11
1 onion (79p bag of 14-15 FF) = 5p
1 tsp paprika - 1p
1 tsp  oregano -1p
1 tsp all purpose seasoning (49p B & Ms) its great 1p
 100g  leeks (66p 500g FF) = 13p
100g mixed peppers (66p 500g FF) =13p...
100g mushrooms (66p 500g FF) =13p
3 cloves garlic (39p 4 bulbs FF) = 3p
1 bay leaf =1p
Sprinkle Parmesan (£1.10 for a pot at Asda) = 5p
1 bag boil in the bag rice (59p 4 bags Aldi) 15p
1 Garlic Baguette (34p Aldi) = 34p

Grand Total for 4 = £2.16


Method :
Bake the Baguette

Boil the rice and whilst doing this - cut  the chicken into bite size chunks, and fry in a little oil (I prefer water) add
the all purpose seasoning/ chopped garlic /chopped onion/paprika/oregano and bay
leaf - fry until chicken is cooked through. Add the mushrooms /leeks and peppers
and drain off any excess liquid (a bit may come from the frozen veg) season with
salt and pepper

keep stirring and when the rice is cooked mix it in with  the chicken
and serve immediately with a sprinkle of parmesan and the baguette
