Caribbean Fish Stew
Ingredients:
2 Onions (59p 1KG Aldi) = 10p
2 Garlic Cloves (39p 4 bulbs Farmfoods) = 2p
2 Tsp Thyme - store cupboard
2 Tsp Cumin - store cupboard
1 tsp turmeric - store cupboard
1 tin of chopped tomatoes (31p Aldi) = 31p
200ml chicken stock - store cupboard
¾ Packet frozen Basa Fillets (£1.49 - Aldi) = £1.11
1 packet green beans (79p Aldi) = 79p
½ Tsp Chilli flakes - store cupboard
½ Orange zest (£1.09 for 6 Aldi) = 9p
Grand Total = £2.42
Method:
Defrost the Basa Fillets. Put the chopped onions, garlic, orange zest,thyme,cumin,turmeric,tomatoes and hot stock into a pan. Bring to the boil and season. Add the chilli flakes and simmer for 20-30 minutes stirring regularly. Add the trimmed green beans and fish cut into bite-sized pieces. Cook for a further 12-15 minutes until the beans are tender and the fish flakes with a fork. Serve immediately and ENJOY!
