Calzones
Ingredients:
100g mild cheddar (450g £1.99 Aldi) = 44p
100g cubed mozzarella (125g 43p Aldi) = 34p
200g cherry tomatoes (69p 300g Aldi) = 46p
120g pepperoni (120g 79p Aldi) = 79p
Handful fresh basil leaves (89p pot Aldi) = 7p
225g strong white flour (1.5kg 75p Aldi) = 11p
½ tsp salt – store
1 tsp instant action yeast (8 sachets 59p Aldi) = 4p
1 pinch sugar – store
1 tbsp oil – store
Method:
Sift the flour and salt in a large bowl, stir in the yeast/oil and sugar then add 150ml warm water. (you may not need all the water) this should make a sticky dough.Turn onto a lightly floured surface and knead for about 10 minutes until smooth and elastic. (quite messy ) leave in a bowl covered with a clean tea towel – for around 30mins.
Preheat the over to 200 degrees 180 for fan and gas 6. Grease 2 large baking trays. Combine the cheddar / mozzarella/tomatoes/chopped pepperoni and basil in a bowl and season. Leave this to one side.
Pat the dough to remove excess air and turn again on to a floured surface and knead for a further 10 mins. The dough is now ready to use.Divide the dough into 4 pieces and rolls into 4 balls. Roll into thin circles and place a quarter of the filling on one half of each circle. Fold over the other half and seal with a little water. Transfer to the baking trays and bake for 20mins until the dough is cooked through and the filling is hot.
Serve immediately.
