Arroz Con Pollo :
6 chicken thighs (half a bag of £3.33 Farmfoods frozen chicken thighs) = £1.66
1 onion (Aldi 79p)= 10p
1/2 tin chopped tomatoes (34p aldi) 19p
50 g frozen mixed pepper (66p 500 g Farmfoods) = 13p
2 garlic cloves (Farmfoods 39p 4 bulbs) = 2p
1 tsp paprika (try and get smoked but not hot) = 1p
1 bay leaf (52p for a box from most supermarkets) = 1p
1 tsp thyme (49p 50g jar Aldi) = 2p
1 tsp oregano (49p 50g jar Aldi) = 2p
1 bag long grain rice (59p 4 bags Bilash rice Aldi) = 15p
750 ml chicken stock (10 stock cubes Tesco 20p) = 2 p
2 tsp tomato puree (Aldi double concentrated puree tube 35p) = 5p
10 ml lemon juice (85p for 500ml from Aldi) = 1.7p

100g frozen peas (99p 1kg bag Aldi) = 10p

Method :
Preheat the oven to 180 degrees 200 non assisted
Heat some oil in a deep sided frying pan. Evenly brown the chicken, remove (when browned) and set aside
reduce the heat and fry the chopped onion until soft /add peppers and garlic. Add the paprika/bay leaf /tomatoes/thyme and oregano and stir in the (dried - removed from the bag) rice. Fry for a couple of minutes stirring constantly. Add the stock /puree and lemon juice and season with salt and pepper.
Transfer everything to a casserole dish and cover with the chicken thighs (pushing down the rice) cook for 15 minutes then add the frozen peas. cook for a further 10 mins until the rice is soft or until all the liquid has been absorbed
Serve immediately
