Slow Cooker Irish Coddle with Braised red cabbage.
Ingredients :
8 pork Sausages (Butchers choice Aldi £1.55) = £1.55
4 Bacon rashers (£6.00 for 54 rashers FF) = 44p
1 onion (79p 1.5kg FF) = 5p
2 garlic cloves (39p 4 bulbs FF) = 2p
400g thinly sliced potatoes (7.5 kg £2.00 FF) = 8p
¼ tsp sage (49p Aldi) = 1p
300ml veg stock and AP seasoning = 3p
100g Red Cabbage (8p 100 g Asda) = 8p
1 apple (99p for approx. 8 Aldi) = 12p
4 Tbsp brown sugar (99p Aldi ) =4p

¼ tsp all spice =1p
¼ tsp ground gloves = 1 p
2 tbsp butter = 5p.
250ml vinegar.
180ml water.

Method:
Cook sausages until golden but not cooked. Remove then add chopped bacon , fry and add the onion, fry for approx. 4 mins. Add chopped garlic and fry another minute.Arrange ½ the sliced potatoes in a preheated slow cooker and spoon in the bacon and onion mixture. Season and add the sage , cover with the rest of the potatoes and then pour on the stock and add in the sausages. Cook on low for at least 7 hours.
For the braised red cabbage :
Pour water in a pan stir in chopped cabbage /apples/brown sugar and spices, add the butter also. Bring to the boil and then simmer for 45 minutes. Drain and then serve , best left a day.
