Pea and bacon pasta Frittata.
Ingredients:
150g Macaroni (50p 500g Asda) = 15p
1 onion (1.5kg 79p Farmfoods) = 5p
100g bacon lardons (89p 150g Aldi) = 59p
150g Frozen peas (99p 1kg Aldi) = 15p
6 eggs (95p 6 Free range Aldi) = 95p
100g Greek style cheese (79p 200g Aldi) = 40p
10g fresh mint (87p 150g Asda) = 8p
Grand Total = £2.37
Method:
Heat the grill. Cook the macaroni as per instructions. While the pasta cooks heat a little oil (or water) in a frying pan and add the chopped onion and bacon over a medium heat until golden. Drain the pasta when cooked and add to the frying pan spreading evenly.Add the beaten eggs and cook for 2 minutes, dot over the crumbled cheese and sprinkle with chopped mint. Cook for approx. 10-12 minutes and then put under the grill for 5-5 minutes until browned and set , sprinkle with the rest of the mint then serve and ENJOY!!
