Gardeners Pie with Bacon and Lentils.
150g Red split lentils (2kg £3.00 Asda) = 22p
600g Potatoes (£2.00 7.5 kg Farmfoods) = 16p
1 onion ( 59p 1kg Aldi) = 5p
200g bacon (£1.25 250g Aldi) = £1.00
200g Carrots ( 1kg 55p Aldi) = 11p
200g Parsnips (600g 49p Aldi) = 16p
2 sticks celery (59p approx 10 sticks Aldi) = 12p
2 garlic cloves (39p 4 bulbs Farmfoods ) = 2p
1 litre vegetable stock - stock cupboard
4 tbsp milk - store
2 tbsp tomato puree (37p 200g Aldi) = 6p

Put the lentils in a pan and cover with boiling water - simmer for 20 minutes until soft. Meanwhile boil the peeled and chopped potatoes until tender. preheat the oven to 200 degrees 180 fan assisted. Heat a little oil in a pan and add the chopped onion and chopped bacon, cook for 5 minutes until browned. Add the diced carrots ,diced parsnips, chopped celery and chopped garlic - cook for 5 minutes.
Add the stock and tomato puree to the vegetables and simmer for 20minutes until the veg are tender. Drain the potatoes and season. return to the pan - add the milk and make into mash. Drain any excess liquid from the lentils - stir into the veg mixture . Add all the veg mixes into a casserole dish and mix well, top with the mash and cook for 20 minutes until the mash is golden - serve and enjoy!!
