Aubergine and Tomato bake with Jacket Potatoes:
2 Medium Aubergines (69p each Lidl ) = £1.38
3 cloves garlic (39p4 bulbs Farmfoods) = 3p
1 3/4 tins plum tomatoes (34p tin Aldi) = 60p
1 packet Mozarella (44p Aldi - same price for
low fat mozzarella and tastes just the same) = 44p
1 tsp oregano and 3 slices of stale breadcrumbs (mix together) = 1p
4 potatoes up to 400g (7.5kg £2.00 Farmfoods) = 4p to make jacket potatoes.
Grand total £2.50 for 4 people.
Preheat the oven to 190 degs or 170 for fan assisted. Heat 1 tbsp. of any oil in a frying pan and add the seasoned
aubergines (sliced into rounds) and fry until golden.
Remove from the pan and fry garlic and add the tomatoes - season again
Layer the Aubergine /mozzarella/tomatoes in a baking dish - cover with the breadcrumb/oregano
mixture - bake for approx. 25 mins or until golden and bubbling. Make the Jacket potatoes - either in the Microwave or as I prefer slowly in the oven. Serve the bake over the jacket potatoes and then..
